recreate what i ate: kale-tahini salad

so i’m thinking of starting a new series called “recreate what i ate.” actually, i’m not thinking about it, i’m doing it. so here’s the first one.

remember the kale-tahini salad i raved about from adama in santa barbara? well, i wasn’t kidding when i said i wanted to recreate it stat. so this past weekend, i did.

i recreated the salad from memory-slash-adapted it from this recipe i found on the thrifty veggie momma’s blog. and perhaps one of the best things about this dish is that all of the ingredients can be purchased at trader joe’s.

kale-tahini salad (adapted from adama restaurant & thrifty veggie momma)

ingredients:
1 bag of trader joe’s organic kale
1 large fuji apple
1 package trader joe’s steamed and peeled baby beets
1 package trader joe’s steamed lentils
1/4 cup (or so) raw walnut pieces (or nuts of your choice, pumpkin or sunflwoer seeds would be good, too)
lemon-tahini dressing, to taste

lemon-tahini dressing:
2 tablespoons tahini
juice of 1 lemon
1 tablespoon olive oil
salt and pepper
water as needed for proper consistency

directions:
place kale in a large mixing bowl and set aside. julienne (that’s a fancy word for slicing them long and thinly) beets (i preferred to serve them cold) and cut apple into relatively thin moon-shapes and add them to the bowl. poke holes in the plastic baggie of lentils and place in the microwave for the directed amount of time. be careful when removing the lentils from the microwave, they’re HOT! allow the lentils to cool before adding them to the bowl (they’ll wilt the kale if added too soon). finally, sprinkle walnuts on top and toss with the tahini dressing. bon appetit!

it was so good. and my dinner guest literally licked.his.plate.clean. so i’d say that’s a big ol’ W in the domesticity playbook, wouldn’t you?
