freezer fudge

here’s something you may not know about me -i have a big sweet tooth. so when i found a fudge recipe that was not only good but good for you, i had to share it! readers, meet freezer fudge. the brainchild of holistic nutritionist and wellness expert, kelly leveque, this tasty treat is perfect for keeping the chocolate cravings at bay.

ingredients:

1 cup of coconut oil

1/4-1/2 cup of almond butter*

1/4 cup cacao or cocoa powder (i use the former for its health benefits)

8-10 drops of liquid stevia (i used the vanilla flavor)

pink himalayan sea salt

 

directions:

melt coconut oil in a large bowl (i just pop it in the microwave for about 40 seconds). whisk in stevia, cacao powder, and almond butter. pour the batter into silicone ice cube trays (i got these from bed, bath & beyond -gotta use those 20% off coupons, right?!) and top with a sprinkling of sea salt. freeze for 20 minutes. once the batter solidifies, i usually keep it in the fridge so it’s soft enough to pop out of the trays to eat as dessert every night!

*i’ve used 1/4 cup for my past two batches and it’s definitely on the subtler side. i plan on upping the amount in my next rendition. it’s really just based on personal preference.

      Would you believe it’s an APRON from Anthropologie? I’ve had it forever but never think to use it! Hopefully you can try the recipe, it’s seriously so easy and is perfect for keeping my sweet tooth in check 😉 xoxo
