when i made the decision, or rather, my body made the decision for me, to abstain from gluten and dairy consumption, i knew there would be things that i would miss. like sandwiches and baked goods and most things with flavor. but perhaps the one item that i miss the most is pizza. ooey gooey greasy cheesy salty thin crust (come at me, deep dish lovers) pizza. and while almond milk certainly appeases my need for cow’s milk and potatoes are my favorite carb anyway, there really isn’t a fare replacement for an italian pie.
but because i wasn’t really into having the world’s worst stomach ache on friday night, my parents and i attempted to recreate a shawna-safe version of my old foodie friend. i’m fairly certain mario batali would have scoffed at our efforts, but it fulfilled a long-standing craving and for that, i say that’s amore.
