let’s just state the obvious: pancakes are always a good idea. especially when you’re craving breakfast for dinner and double especially when they are grain-free, gluten-free, dairy-free, and full of protein. and did i mention they only require two, yes TWO ingredients? eat your heart out, ihop.
2 good to 2 be true 2-ingredient pancakes (adapted from the skinny confidential blog)
1 ripe banana
dash of cinnamon
splash of vanilla extract
trader joe’s coconut oil spray
desired toppings (berries, nuts, coconut flakes)
mash your banana with a fork. in a separate bowl whisk eggs together. combine the banana and egg mixture as well as the cinnamon and vanilla. heat up a saute pan on low to medium heat and coat generously with your coconut oil spray (or you can use a teaspoon coconut oil if you have that on hand instead). drop silver dollar-size pancakes into the pan. allow the cake to set for about thirty seconds before flipping it and letting it cook for another thirty. scoop out pancakes onto a plate to rest before topping them with your desired additions -mixed berries, coconut flakes, real maple syrup, agave, etc.
i chose to forgo the syrup and instead enjoyed my mini hotcakes with plain almond milk yogurt, blueberries, and strawberries. unlike the flour-based variety, these pancakes are light and fluffy and don’t leave you with that “i just ate a ton of bricks” feeling when you’re finished. plus they are super moist with the addition of the banana and packed with protein from the eggs!
